To escape reality, I sometimes do things that are a bit unusual, like cooking. I’m always on the lookout for something new, so what are your favorite dishes that are quick but super delicious?

On my more prepped side I’ve some chili-sin-carne-and-chili recipe:
Onions and bell peppers chopped and heated
1 can of lentils with soup greens in there
Half a can of tomatoes (the complete ones)
Some Tomato paste, salt and pepper for taste
Cook for like… 25 minutes I guess

This is my self-made easy egg fried rice recipe. It takes about 10 minutes to cook, because I cheat and use ‘instant rice’ and precooked meat. The peanut oil really elevates it IMO, so keen to hear if there are any alternatives for those with allergies. Calories are for guidance only. Serves 2.

Ingredients

  • 1 packet precooked microwave rice (370 cal)
  • 1 tsp sesame oil (40 cal)
  • 2 tsp peanut oil (80 cal)
  • 1 tbsp light soy sauce (8 cal)
  • 2 large eggs (142 cal)
  • 75g fresh precooked prawns (96 cal)
  • 60g cooked chicken (68 cal)
  • 40g frozen petit pois peas (30 cal)
  • Optional: MSG

Tools

  • Large frying pan
  • spatula/wooden spoon
  • tsp and tbsp measure
  • 2/3 bowls (for prawns, chicken and peas)

Steps

  1. weigh out prawns, chicken and peas. Chop chicken into small bite-sized pieces.
  2. Heat frying pan and place 2 tsp of peanut oil.
  3. Squeeze the rice packet to separate the rice, tear open and empty contents into frying pan. Stir the rice ensuring that it is lightly coated by the oil.
  4. Turn pan down to a low heat and drizzle the soy sauce, stirring through the rice.
  5. Once the rice is an even golden colour, create a hollow in the rice and crack in 1 egg. Break the yolk and allow it start cooking before gradually folding it into the rice. Once fully cooked, repeat for second egg. Add MSG at this stage to taste.
  6. Add chicken and prawns, turning heat up to medium/med-low. Stir through for approximately 2-3 minutes.
  7. Drizzle the sesame oil, stir through and allow to sit for a further minute. Add the peas and again stir for one minute before serving.

Stir fry is always good, fast and delicious.

In order to keep everyone in the family happy I try to make every dinner tasty, but also fast for my own sanity.

Other winners are nachos (layered sauce, tortilla chips, herbs, vegetables …peppers mushrooms and onion) stacked in an oven dish.

Quesadillas → pre-made tortillas and just tomato paste, veggies, (vegan) cheese, and I make my own frijoles to go with it.
Frijoles → 2 cans of black beans, drain one, leave the liquid in the other, put in a mixing container, add olive oil, salt, pepper, garlic and onion powder, some smoked paprika, and some fresh parsley, blend it up with a stick mixer or blender, and fry it in a fry pan, on medium-low heat until it thickens enough to be spreadable. (usually not that long)

Bulgur “salad”: boil some bulgur, fry a bunch of veggies of your choice, add salt, herbs whatever, but to get it to taste sort of shwarma like, you just need cardamom and nutmeg, and half as much cinnamon as the other spices. You can also add lemon or lime juice, then drain the bulgur and mix it into the veggies, it’s yum, works really well with falafel or in a wrap, with hummus etc.
